I can't believe I'm suggesting this again.
How about some sort of procedural course.
Something like assign difficulties to various size jumps them procedurally generate sections and taste them in difficulty and then at run time pick randomly from increasingly more difficult sections.
This would give a different course each time but make it have a similar difficulty.
You could even print the seed and allow it to be entered for competitions.
Maybe have a run key to go faster and increase your time/score more quickly when going faster, maybe jump further too.
