Embarrassed to ask this because the answer is either documented somewhere or is patently obvious.
But is there a way to switch from MMFS and MMFS2 without having to (soft-disable) the MMFS ROM?

I don't quite understand you question but you will find the answer in the Command Reference Manual.

Clue: *OPT5,n ; *DISK ; *CARD to switch between filing systems.
