Similarly, I much appreciate the service and all that went into it.
Compared to the mid-80s, I think there are fewer people in the pool of potential users. I too would recommend a schedule: whether Friday evening or Sunday morning, whether every week or alternate weeks or just once a month. Make it regular, pre-announce it and remind people, and see what happens. Only run it as often as you have energy and enthusiasm to do so. If you're going to have to miss one of your regular slots, let people know.
It might be interesting to run it when there's some kind of event on, whether an Atom event in Netherlands, a VCF in USA, or an ABUG in the UK. But again, put out a little pre-announcement, and a reminder.
(I run the twice-every-three-weeks ABUG zoom sessions, on specific weekday evenings, and I send out reminders the previous day and on the day, here and on the stardot Discord. At one point we were running every week, and that became too much for me. At another earlier point online ABUGs were an all-day affair with a schedule of speakers, and that was great while it lasted and great for the lockdown times, but a huge amount of work - not by me, mostly I think by Dave Arcadian and the speakers - and no longer runs that way.)
